Look for the dark greens and oranges in the vegetables of fall. Microwave a sweet potato for a delicious side dish or snack. Add spinach, kale, collard greens, or turnip greens to a pot of soup.

Preparing salad
For an average 2000 calorie diet include 2½ cups of vegetables. Amounts vary with age, sex and physical activity.

What equals a cup? That is an 8 ounce measuring cup. In general, 1 cup of raw or cooked vegetables or vegetable juice, or 2 cups of raw leafy greens can be considered as 1 cup from the vegetable group.
